Indian Plum Cake / Christmas cake

Ingredients :



  • Dry Fruits
    • Dates - 100g
    • Raisins - 100g
    • Cranberries - 100g
    • Apricot - 100g
  • Nuts
    • Almonds - 100g
    • Cashew nuts - 100g
    • Walnuts - 100g
  • Spices
    • Cinnamon
    • Cloves
    • Cardamon
  • Orange Juice - required amount to soak dry-fruits
  • Self-raising flour - 225g
  • Brown sugar - 100g
  • Caster sugar - 100g
  • Unsalted Butter - 200g ( in room temperature )
  • Eggs - 2

Method
  1. Pre-heat over to 150 degrees
  2. Chop all dry fruits. Simmer in orange juice for 15 mins and cool it down
  3. Chop all nuts to small pieces
  4. Grind brown sugar and spices in blender
  5. Beat butter, ground brown sugar, caster sugar and eggs to nice creamy consistency
  6. Add self raising flour and fold in smoothly
  7. Add soaked/cooled dry fruits and nuts and mix evenly.
  8. Line a 23cm cake tin with baking parchment. Also cover around the tin to avoid uneven baking



  9. Add the cake mix to tin
  10. Bake for 1.5 to 2 hours. Check the center with a skewer before removing
  11. Cool and serve ( YUM !! YUM !! )
