Ingredients :
- Dry Fruits
- Dates - 100g
- Raisins - 100g
- Cranberries - 100g
- Apricot - 100g
- Nuts
- Almonds - 100g
- Cashew nuts - 100g
- Walnuts - 100g
- Spices
- Cinnamon
- Cloves
- Cardamon
- Orange Juice - required amount to soak dry-fruits
- Self-raising flour - 225g
- Brown sugar - 100g
- Caster sugar - 100g
- Unsalted Butter - 200g ( in room temperature )
- Eggs - 2
Method
- Pre-heat over to 150 degrees
- Chop all dry fruits. Simmer in orange juice for 15 mins and cool it down
- Chop all nuts to small pieces
- Grind brown sugar and spices in blender
- Beat butter, ground brown sugar, caster sugar and eggs to nice creamy consistency
- Add self raising flour and fold in smoothly
- Add soaked/cooled dry fruits and nuts and mix evenly.
- Line a 23cm cake tin with baking parchment. Also cover around the tin to avoid uneven baking
- Add the cake mix to tin
- Bake for 1.5 to 2 hours. Check the center with a skewer before removing
- Cool and serve ( YUM !! YUM !! )
