Chicken Dum Briyani/Hydrabadi

Ingredients :







  • 3 Tomatoes
  • 1/2 kg of chicken
  • 1 cup curd
  • 2 bay leaf,2 clove,cinnamon, 2 cardamon,2 star anise
  • Ginger garlic paste
  • 2 onions
  • One teaspoon cumin seeds
  • 1/2 kg of Basmati rice
  • 2 spoon chilli powder
  • Half spoon turmeric powder
  • 1 spoon of Garam powder
  • coriander and mint leaves
  • 1 lemon
  • 1 spoon of rose water
  • pinch of saffron
  • Salt
  • Oil/ghee

Method :


In a wide/big vessels, add ghee/oil, add all spices(
2 bay leaf,2 clove,cinnamon, 2 cardamon,2 star anise) and green chillies



Add sliced onion fry well. add ginger-garlic paste



Add mint leaves and tomatoes.cook them for few minutes.



Add chicken,cook them well for few minutes.add turmeric powder, red chilli powder and curd.

Now add 80% cooked rice in a cooked chicken masala.
Add saffron,lemon water and rose water for garinsh.
close with a lid stem in a very low flame for about 20 minutes.

mix well.. serve with raita, boiled egg and any gravy of your choice
