Egg Sambar (Poached Egg)

Ingredients :

  • 6 eggs
  • Two teaspoons of sambar powder
  • One onion
  • Two tomatoes
  • Coconut (for paste)
  • Curry leaves
  • Coriander
  • Curry leaves
  • Salt
  • Oil

Method :

Fry onion and curry leaves until fragrant. Next add tomato, salt and sambar powder and cook for a few minutes.

In a mixer make a chutney with some coconut and water. Add this to the sambar and mix.

Add the egg as shown below. Be careful not to stir too vigorously otherwise the eggs may scramble. Cook for 10-15 minutes.

Serve with rice and optionally avarakkai poriyal. Enjoy!
